Avocado Toast with Poached Eggs

INGREDIENTS

  • 2 slices sourdough bread

  • 1 ripe avocado

  • 2 eggs

  • 2 tablespoons Glaze extra virgin olive oil

  • Chilli flakes and sea salt

  • Fresh lemon juice

INSTRUCTIONS

Prep time: 15 minutes | Serves: 2

  1. Toast the sourdough until golden and crisp.

  2. Mash the avocado with lemon juice and sea salt.

  3. Poach the eggs in simmering water for 3 minutes.

  4. Spread avocado on toast and top with poached eggs.

  5. Drizzle generously with Glaze olive oil, add chilli flakes and serve.
